Irish Soda Bread

You will need:
4 tablespoons sweet butter, softened
½ cup sugar
2 large eggs
4 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1½ cups buttermilk
1 cup currants

 Butter a cookie sheet. Heat oven to 350
degrees F. In a large bowl beat butter and
sugar together. Add eggs, one at a time,
beating well after each.   In a medium bowl
whisk flour, baking powder, baking soda, and
salt together.  Beginning and ending with
flour mixture alternately add flour and
buttermilk, beating well after each addition.
Stir in currants.  On a generously flourered
hard surface knead the dough about 4
minutes until smooth and not sticky, adding
flour as needed.  Form dough into 7½-inch
rounds. Transfer to prepared cookie sheet.  
Etch an X in the top of the loaf.  Bake about
1 hour 10 minutes or until it sounds hollow
when tapped on. Move to a rack to cool
completely before slicing.

Fried Bananas

You will need:
Bananas
Butter
Sugar
Cinnamon

 Peel your banana.  Split the banana
lengthwise into 3 or 4 pieces. Saute
the banana slices in butter.  Before
serving,  sprinkle sugar and cinnamon
over the top.  Serve hot.  
Easy Breakfast Casserole

You will need:
1 box of croutons
1 pound sausage
1 cup grated cheese
6 eggs
1 can mushroom soup
1 soup can of milk
1 teaspoon dry mustard
Salt and pepper to taste

 Spread croutons in a 9 X 13 inch
casserole dish. Brown sausage and
drain. Sprinkle sausage over
croutons. Sprinkle cheese over
sausage. Beat eggs in a large bowl.
Add milk , mustard, salt and pepper,
stir, and pour over top of casserole.   
Bake for 1 hour at 350 degrees F
degrees.
